Mozzarella fingers

Reteta (Facebook ):
- mozzarella feliata aprox. cat degetul de groasa
- faina
- ou batut cu un pic de apa
- pesmet

Se trec feliile de mozzarella prin faina, apoi ou si la final prin pesmet. De 2 ori prin fiecare. Apoi se aseaza pe o tava si se introduc la congelator pentru cateva ore.
Eu am feliat o bucata mai mare in urma cu 1 saptamana si am facut in 2 randuri cateva felii. Congelatul e 'secretul' pentru a nu se topi excesiv (se scurge si asa, dar muuuult mai putin)
Se coc in cuptorul preincalzit la 200° C, cu ventilatie, pentru aprox. 20 minute.

Lamn stew

Season the meat with salt and pepper and then brown it in batches in a large pot or Dutch oven.

Be sure the oil is very hot and don’t crowd the pan or the meat won’t sear properly. This step is a bit time consuming but important because it caramelizes the surface of the meat and adds wonderful depth of flavor to the stew.

Set the meat aside, then add the onions and garlic to the pot, along with a few tablespoons of water to loosen the brown bits from the bottom of the pan.

Stir in the tomato paste and cook a few minutes more.

Add the lamb back to the pot and sprinkle it with flour, which will thicken the broth as it cooks.

Cook and stir for for a few minutes until the flour dissolves.

Add the braising liquid, which is simply beef broth, Guinness, water and herbs.

Bring the broth to a boil, then cover and simmer for about an hour and twenty minutes.

Add the carrots and potatoes and continue cooking until the meat is tender and the vegetables are cooked, about 30 minutes more. Be sure to stir it a few times so the vegetables don’t stick to the bottom of the pan.

As you can see below, the broth thickens up nicely as it continues to cook. Right before serving, stir in the frozen green peas. They’ll defrost and cook right in the stew.

You can definitely make this stew a day or two ahead, as the flavor only improves. Just note that the broth thickens up quite a bit in the fridge so you may need to add some water to thin it out.

Apple roses

Leave apples with skin on.
Core the apples and cut in half from top to bottom. Cut each half in very thin slices. Put the apple slices in a bowl with water and lemon juice and microwave for 3 minutes.

Mix the 3tbsp Apricot preserve with 2 tbsp water.
Spread the pastry dough and cut into strips as wide as the apple slices.

On each strip put some Apricot preserve down the middle side. Place the apple slices half overlaping on half of the pastry dough(from the center apricot preserve). Sprinkle cinnamon on top of the apples. Fold the other half of the pastry dough over the apple slices. Roll the pastry with apples and place it in a cupcake tin.

Bake according to instructions.

Sprinkle with power sugar.

BEET, GOAT CHEESE AND WALNUT TART

Serves 4 to 6

1 recipe tart dough, shaped and blind baked
Yield: 12 ounces, enough for one 10-inch tart or 6 individual tarts

1½ cups all-purpose flour
½ teaspoon kosher salt
10 tablespoons unsalted butter, cut into small cubes and well chilled
4 to 5 tablespoons ice water

1. In a mixing bowl, combine the flour and the salt. Quickly cut the butter into the flour, using a pastry blender or the back of a fork, until the butter pieces are the size of large peas. (Alternatively, cut the butter into the flour by pulsing it 8 to 10 times in a food processor, being careful not to overheat and overmix the butter.)

2. Add the ice water. Using just your fingertips and working quickly, combine the flour mixture and the water. Work just until the water is absorbed. The dough will be ragged but should hold together when you squeeze it. If it seems dry, sprinkle on a few more drops of water. (I had to add a few more tablespoons of water.)

3. Gather the dough up into a ball — it’s fine if the dough does not come together completely at this time. Wrap the dough well in plastic wrap, flatten it a bit, and let it rest in the refrigerator for at least a half hour before rolling. The dough will keep in the refrigerator for up to 2 days. You can also freeze the dough, well wrapped; allow it to defrost for a day in the refrigerator before using it.

4. Preheat the oven to 375ºF. Roll the dough into a large circle — large enough to overlap whatever sized tart pan you are using. Press the dough into the corners and into the sides of the tart pan. Trim off any excess dough. Line the tart with plastic wrap and fill with dried beans or pie weights. Fold plastic up and over to expose the crust. Bake for 20 minutes. Remove from oven. Remove beans from tart.

Meanwhile Prepare the Tart.
Note: This recipe has been slightly modified from the original, which can be found here.

2 to 3 small beets (Note: Since you are roasting beets, you may as well roast a few more. When assembling the tart, I used about 2 heaping cups of diced beets)
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter or olive oil
medium onion, thinly sliced
2 tablespoons dry white wine (or Sherry or Madeira — whatever you have on hand.)
1 recipe tart dough (above)
large eggs
¾ cup heavy cream (I used buttermilk)
4 ounces fresh goat cheese (I used less. Add according to taste/preference.)
1 cup chopped walnuts (I used less. Add according to taste/preference.)
1 tablespoon walnut oil (Optional — I did not use.)
About 2 tablespoons chopped fresh parsley

1. Heat the oven to 450°F. Wash the beets. Place the beets in a small ovenproof pan (like a brownie pan or a pie plate.) Add water to reach 1/8-inch up the sides. Cover the pan tightly with aluminum foil. Bake until the beets are tender when pierced with a paring knife, about 45 minutes.

2. Allow the beets to cool. (Or not). Rub the skins off of the beets with your fingers, then dice the beets into small cubes. (Be careful, as beet juice can stain counters, towels, and even your hands; you may want to wear gloves for this step.)

3. Heat the butter in a sauté pan over medium heat. Add the onion, season with a little salt, and cook, stirring every few minutes, until the onion is just tender, about 7 minutes. Add the alcohol and cook for another minute, scraping up any browned bits stuck to the bottom of the pan. (Note: I caramelized my onions a bit more — cooked them slowly for about 25 minutes.)

4. Heat the oven to 350°F. Add the beets and onions to the blind-baked tart shell. (Note: I added the walnuts at this step as well, but Hamersley adds them after the tart has already baked for 20 minutes. Your call.)

5. Whisk together the eggs and cream (or buttermilk), season with a pinch of salt and pepper, and carefully pour over the beets and onion, letting the mixture seep evenly into the beets. Dot the goat cheese all over the top of the tart. Put the tart on a baking sheet and bake it for 20 minutes. Sprinkle the chopped walnuts on top of the tart and drizzle the walnut oil over it, if using. Return the tart to the oven and bake until just set, an additional 15 to 20 minutes. Sprinkle the tart with the chopped parsley and let it rest for at least 5 minutes before serving.

Final Notes: If you can roast the beets ahead of time and prepare the tart shell (or make the tart dough) in advance, this tart can be assembled in no time.

Placinta cu dovleac - felii de placinta
Placinta cu dovleac este unul dintre placintele noastre preferate si nu exista toamna in care sa nu o fac de cateva ori. Si, cum deja toamna a venit, desi inca e destul de cald afara, am pregatit reteta de placinta cu dovleac si am savurat-o cu foarte mare pofta. Pentru placinta, eu folosesc foi de placinta subtiri, pentru ca imi place textura lor crocanta, dar daca doriti puteti sa o incercati folosind reteta aluatului de la Placinta cu mere. Placinta cu dovleac cu foi era specialitatea tatalui meu. Si el folosea foi subtiri de placinta, dar le facea in casa si ieseau atat de frumoase incat le admiram cu uimire de fiecare data. Promit sa postez si reteta de foi subtiri pentru placinta cu dovleac sau mere imediat dupa ce o sa am putin timp liber. Pana atunci, va recomand sa folositi foi de placinta subtiri din comert pentru aceastareteta de placinta cu dovleac.

Placinta Cu Dovleac – Ingrediente

  • 1 kg dovleac ras
  • 100 g unt
  • 125 g zahar
  • 400 g foi placinta subtiri
  • 100 g unt sau 50 g unt+50 g ulei pentru uns foile
  • vanilie/scortisoara (optional)

Placinta Cu Dovleac – Mod de preparare

  • Curatam dovleacul de coaja si il dam prin razatoarea cu gauri mari.
  • Amestecam dovleacul cu zaharul si untul taiat in bucatele si il punem intr-o cratita incapatoare pe foc mic. Il calim cca 15 minute dupa care stingem focul si lasam dovleacul sa se raceasca complet.
  • Aici fac o mica paranteza si va spun ca, dupa ce se raceste, il puteti pune in pungi si congela pentru iarna.
Placinta de dovleac - Umplutura de dovleac
  • Topim untul si il lasam sa se raceasca. Dupa ce s-a racit, intindem o foaie de placinta in tava de cuptor tapetata cu hartie de copt si o ungem cu unt topit pe intreaga suprafata. Adaugam peste prima foaie o a doua foaie pe care o ungem cu unt si peste a doua foaie asezam a treia si ultima foaie pe care o ungem din nou cu putin unt.

  • Punem un sfert din compozitia de dovleac deasupra foilor, pliem capetele foii peste umplutura si apoi formam un rulou.
  • Am facut un rulou mai plin pentru Cris si unul mai micut pentru mine.

  • Ungem placinta cu putin unt sau ulei si o coacem la 180°C, cuptor preincalzit, pentru 30-35 minute.
  • Dupa ce  s-a racit, o pudram cu zahar pudra, o taiem si o servim cu foarte mare pofta.

Pancakes

1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

Directions

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Couscous cu fasole verde și roșii uscate

Ingrediente:

200 g cuşcuş, 200 g fasole verde, 100 g roşii uscate în ulei, două cutii ton în ulei, o lingură cu mentă, 400 ml apă, o lămâie, 75 ml ulei de măsline, 100 g măsline feliate, sare, piper, alune, miez de nucă, pătrunjel.

Preparare:

Cuşcuşul se pune la înmuiat cu apa clocotită, se acoperă cu un capac şi se lasă să se umfle.

Fasolea verde se taie în bucăţi mai mici, se fierbe în apă cu sare şi se scurge.

Roşiile uscate se scurg de ulei, se taie în bucăţi mai mici şi se pun într-un bol mai mare împreună cu fasolea verde şi cuşcuşul.

Se adaugă menta spălată şi tocată mărunt, măslinele tăiate în bucăţi mici, suc de lămâie după gust şi uleiul de măsline.

Se presară sare şi piper după gust, se amestecă, se pune salata în boluri şi se aşază deasupra bucăţi de ton scurse de ulei.

 

Se serveşte imediat sau se lasă la rece circa 30 de minute.

Zutaten

- 3 kg Zucchini
- 1 kg Zwiebel(n)
- 1 kg Zucker
- 1 Liter Essig (Kräuteressig)
- 3 EL Senf
- 3 EL Curry
- 3 EL Paprikapulver
- 2 EL Cayennepfeffer
- 3 EL Mehl

Zubereitung

Arbeitszeit: ca. 30 Min. Ruhezeit: ca. 1 Tag 
Schwierigkeitsgrad: simpel 


Zucchini und Zwiebel klein würfeln, etwas Salz hinzufügen und über Nacht stehen lassen.

Ausdrücken und mit Zucker, Essig und Senf 30 Min. kochen. Die letzten 10 Min. restliche Gewürze hinzugeben und mit Mehl binden. Gleich heiß in saubere gespülte Gläser geben und umgedreht erkalten lassen.

Haltbar ca. ein halbes Jahr.






Rüebli-Ingwer-Suppe Laura

Rüebli-Ingwer-Suppe

Zutaten
Für 4 Personen

500 g Rüebli
1 mittelgrosse Kartoffel
1 Schalotte
1 Stück Ingwer, daumengross
500 ml Gemüsebouillon
500 ml Orangensaft
1 EL Sojasauce*
Salz*
Schwarzer Pfeffer aus der Mühle
1 EL Crème fraîche oder Rahm
1 EL Korianderblätter**, gehackt


Zubereitung

Die Gemüse waschen und schälen. Rüebli
und Kartoffel in Stücke schneiden. Schalotte
grob hacken, Ingwer in feine Scheiben
schneiden. Alles in einen Kochtopf geben
und mit Bouillon und der Hälfte des Orangensaftes
köcheln lassen, bis das Gemüse
weich ist. Mit dem Stabmixer pürieren, anschliessend
Sojasauce und restlichen Saft
hinzufügen. Mit Salz und Pfeffer abschmecken.
Suppe anrichten, mit Crème fraîche
und Koriander garnieren.

Brownie recipe Hannes

The instruction in the text are correct, I slightly modified the ingredients and the amount.

 This is what I used for the whole baking tray:
 - 400 g butter
 - 400 g dark chocolate, min. 70% cacao (instead of the milk chocolate)
 - 8 eggs
 - 400 g almonds, grounded
 - 400 g sugar
 - 2 bags of vanilla sugar
 - 1 bag of baking powder
 - 2 pinches of salt
 - fat or butter for the tray
 - icing sugar for sprinkling the cake (i skipped the breadcrumbs/Zwiebackbrösel)

Tomato soup

Ingredients

Serves 6-8
  • 2 carrots 
  • 2 sticks celery 
  • 2 medium onions 
  • 2 cloves garlic 
  • olive oil 
  • 2 organic chicken or vegetable stock cubes 
  • 2 x 400 g tinned plum tomatoes 
  • 6 large ripe tomatoes 
  • 1 small bunch fresh basil 
  • sea salt 
  • freshly ground black pepper 


To make your soup:

Peel and roughly slice the carrots. Slice the celery. Peel and roughly chop the onions. Peel and slice the garlic. Put a large pan on a medium heat and add a couple of lugs of olive oil. Add all your chopped and sliced ingredients and mix together with a wooden spoon.

Cook for around 10 to 15 minutes with the lid askew, until the carrots have softened but are still holding their shape, and the onion is lightly golden.

Put the stock cubes into a jug or pan and pour in 1.5 litres of boiling water from the kettle. Stir until the stock cubes are dissolved, then add to the pan with your tinned and fresh whole tomatoes, including the green stalks that may still be attached to some of them (these give an amazing flavour – trust me!) Give it a good stir and bring to the boil. Reduce the heat and simmer for 10 minutes with the lid on. Meanwhile, pick your basil leaves.


Remove the pan from the heat. Season with salt and pepper and add the basil leaves. Using a hand blender or liquidizer, pulse the soup until smooth. Season again before dividing between your serving bowls.

Grünkohl mit Pinkel

Zutaten

  • 1 kg Grünkohl, frisch, (muß einal Frost gehabt haben) 
  • Margarine
  • 1 Zwiebel
  • Wasser, nach Belieben (lieber etwas weniger angießen und nachgießen)
  • Speck,Bauchspeck, fingerdick
  • Würste
  • Salz und Pfeffer
  • Senf
  • n. B. Zucker

Zubereitung

Grünkohl putzen.
Zwiebel würfeln und in der Margarine glasig dünsten, dann den Kohl hinzufügen und etwas mitdünsten. Mit etwas Wasser angießen, so daß der Kohl leicht herumschwimmt. Bitte darauf achten, daß nicht zuwenig Flüssigkeit im Kochtopf entsteht, da sich der Kohl leicht anlegt. 

Der Kohl muß lange kochen, er ist in etwa gar, wenn er eine olivgrüne Farbe angenommen hat. 

Nach einer gewissen Kochzeit (ca. 1 Stunde), den Kohl mit den Gewürzen abschmecken und die verschiedenen Fleischsorten oben auf den Kohl legen. Das Ganze ist gar, wenn der Kohl seine olivgrüne Farbe hat und das Fleisch durch ist. 

Zwischendurch immer wieder umrühren, damit sich nichts anlegt. Zum Ende der Garzeit darauf achten, daß der Kohl nicht mehr ganz so flüssig ist. 

Kohl in einer Schüssel und das Fleisch auf einer Platte servieren.

Dazu reicht man Salzkartoffeln und einen "Korn" (klarer Schnaps) oder einen Kräuterlikör zur besseren Verdauung.
